Sweet and Sour Kumquat Chicken

Ingredients
1 pound
Chicken breast (cut into pieces)
2 tablespoons
Olive or avocado oil (divided)
1/2 cup
Onion (chopped)
3/4 cup
Kumquats (sliced & seeds removed)
2 cloves
Garlic (minced)
3/4 teaspoon
Fresh grated ginger
1/2 teaspoon
Crushed red pepper
1/8 teaspoon
Black pepper
1/3 cup
Brown sugar
1/4 cup
Soy sauce or coconut aminos
SERVING SUGGESTIONS INCLUDE:
Rice
Steamed broccoli
Sesame seeds for topping
Step by Step Instructions
- Season the chicken breast pieces with salt the night before you plan to cook this recipe.
- Heat a cast iron skillet and add 1 tablespoon of oil and the chicken pieces. Cook until the internal temperature of the chicken reaches 165. Remove the pieces from the skillet and set them aside while you prepare the sauce.
- Add the onion and remaining oil to the skillet and cook over medium heat for 3 minutes. Add the kumquats and cook for 5 more minutes.
- Stir in the garlic, ginger, crushed red pepper, and black pepper and let cook for 1 minute, then add the brown sugar and soy sauce/coconut and cook until the sauce thickens.
- Add the chicken pieces back to the skillet and stir to coat them with the sauce.
- Once the chicken has been warmed and tossed with sauce, serve it with rice and steamed broccoli, and garnished with sesame seeds if desired.
